Low Carb Buffalo Chicken Lettuce Wraps (Weight Watchers Friendly)

Ingredients

  • 2 cups cooked chicken breast
  • 3 tablespoons buffalo sauce (mild or medium)
  • 1 teaspoon olive oil
  • 6 butter lettuce leaves
  • 1/2 cup shredded carrots
  • 1/2 cup diced cucumbers
  • 2 tablespoons reduced-fat feta cheese
  • 2 tablespoons sliced green onions

Instructions

  • Heat olive oil in a nonstick skillet. Add the cooked chicken and buffalo sauce, tossing until warm and evenly coated.
  • Rinse and pat the lettuce leaves dry.
  • Divide the shredded carrots and diced cucumber among the leaves.
  • Top with the buffalo chicken mixture.
  • Sprinkle with feta cheese and garnish with green onions.
