Lightened Up Waldorf Salad

Ingredients

  • 2 red apples (I used Fuji), chopped
  • 2 cups grapes, cut in half
  • 1 celery stalk, sliced
  • 2 tablespoons walnuts, roughly chopped
  • 2 tablespoons light mayonnaise
  • 1/4 cup fat-free sour cream
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste

Instructions

  • Add the apples, grapes, celery and walnuts to a large bowl.
  • In a small bowl add the light mayonnaise, fat-free sour cream, lemon juice, salt and pepper. Mix together then pour over the fruit. Stir to combine.
  • Refrigerate 1 hour then serve.
