Place the cream cheese, Mexican cheese, ranch seasoning, and green onions in a medium-sized mixing bowl. Thoroughly mix the ingredients.
Divide the mixture into two portions, one a little larger for the body and the second a little smaller for the head.
Place one portion in the center of some plastic wrap. Wrap it up and shape it into a ball. Repeat with the second cream cheese portion.
Refrigerate the cream cheese balls for at least one hour.
Put the shredded mozzarella cheese on a plate or baking dish. Unwrap the large cream cheese ball and roll it through the cheese.
Place the cheese-covered ball on your serving plate. Insert two toothpicks in the center of the large cream cheese ball. This will help the head stay in place.
Unwrap the smaller cream cheese ball and roll it through the mozzarella cheese. Place the ball onto the body and through the toothpicks.
Decorate your snowman by inserting whole peppercorns to create the eyes, mouth, and buttons. Use a baby carrot for the nose, positioning it in the center of the head ball.
Refrigerate the snowman until you are ready to serve it.
