Lightened-Up Snowman Cheese Ball

Ingredients

  • 2 (8 oz.) blocks of reduced-fat cream cheese (room temperature)
  • 1/2 cup reduced-fat Mexican cheese, shredded
  • 1 cup part-skim mozzarella cheese, shredded
  • 1 oz. ranch seasoning
  • 1/4 cup green onions, chopped
  • 1 baby carrot
  • Whole peppercorns
  • Two toothpicks

Instructions

  • Place the cream cheese, Mexican cheese, ranch seasoning, and green onions in a medium-sized mixing bowl. Thoroughly mix the ingredients.
  • Divide the mixture into two portions, one a little larger for the body and the second a little smaller for the head.
  • Place one portion in the center of some plastic wrap. Wrap it up and shape it into a ball. Repeat with the second cream cheese portion.
  • Refrigerate the cream cheese balls for at least one hour.
  • Put the shredded mozzarella cheese on a plate or baking dish. Unwrap the large cream cheese ball and roll it through the cheese.
  • Place the cheese-covered ball on your serving plate. Insert two toothpicks in the center of the large cream cheese ball. This will help the head stay in place.
  • Unwrap the smaller cream cheese ball and roll it through the mozzarella cheese. Place the ball onto the body and through the toothpicks.
  • Decorate your snowman by inserting whole peppercorns to create the eyes, mouth, and buttons. Use a baby carrot for the nose, positioning it in the center of the head ball.
  • Refrigerate the snowman until you are ready to serve it.
