Lightened Up Grasshopper Pie

Ingredients

  • 1 chocolate pie crust
  • 1 box (1 oz.) fat-free sugar-free vanilla instant pudding mix
  • 2 cups skim milk
  • 4 oz. fat-free Cool Whip (defrosted)
  • 1/2 teaspoon mint extract
  • Optional: green food coloring

Instructions

  • Add the pudding mix and 2 cups of skim milk to a medium mixing bowl. Whisk together for 2 minutes. Let the pudding sit for 5 minutes.
  • Add the Cool Whip and green food coloring to the pudding and fold the mixture together.
  • Pour the mixture into the pie crust. Optional: break up an Oreo or chocolate graham cracker to top the pie.
  • Cover and refrigerate for 2 hours.
