Light Fettuccine Alfredo

fettuccine noodles
1
teaspoon
butter
2
cloves
garlic, minced
1
tablespoon
all purpose flour
1
cup
skim milk
1/4
teaspoon
salt
1/8
teaspoon
pepper
1
tablespoon
grated Parmesan cheese
Instructions
Bring a pot of water to a boil. Cook the fettuccine noodles according to the directions on the box, then drain.
Melt the butter in a small saucepan. Add the garlic and stir for 30 seconds. Stir in the flour.
Very slowly whisk in the milk. Start with only a couple of tablespoons at a time, making sure the flour doesn't clump up.
Add the salt and pepper then bring to a simmer. Continue to whisk occasionally while it simmers for 5 minutes.
Stir in the Parmesan cheese. Pour the sauce over the noodles and stir together.
