Light Fettuccine Alfredo

Ingredients

  • 6 oz. fettuccine noodles
  • 1 teaspoon butter
  • 2 cloves garlic, minced
  • 1 tablespoon all purpose flour
  • 1 cup skim milk
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 tablespoon grated Parmesan cheese

Instructions

  • Bring a pot of water to a boil. Cook the fettuccine noodles according to the directions on the box, then drain.
  • Melt the butter in a small saucepan. Add the garlic and stir for 30 seconds. Stir in the flour.
  • Very slowly whisk in the milk. Start with only a couple of tablespoons at a time, making sure the flour doesn't clump up.
  • Add the salt and pepper then bring to a simmer. Continue to whisk occasionally while it simmers for 5 minutes.
  • Stir in the Parmesan cheese. Pour the sauce over the noodles and stir together.
