Lemon Garlic Orzo

Ingredients

  • 1 cup uncooked orzo
  • 1 1/2 teaspoons Better Than Bouillon (chicken)
  • 1 1/2 cups water
  • 1 lemon
  • 1 teaspoon light butter
  • 1 clove garlic, minced
  • 1 tablespoon parsley, chopped
  • Salt and black pepper, to taste

Instructions

  • Add the water and Better Than Bouillon to a saucepan and bring to a boil. Stir in the orzo. Cover with a lid and reduce heat to low. Set a timer for 10 minutes.
  • Melt the butter in a small frying pan and add the garlic. Cook for 30 seconds while stirring.
  • Use a lemon zester to get 1 teaspoon of lemon zest.
  • Add 2 tablespoons of fresh lemon juice to the garlic.
  • Once the orzo is done cooking and the broth has been absorbed, add in the garlic, lemon juice, lemon zest and parsley. Stir together and serve.
