Lemon Garlic Chicken Pasta

Ingredients

  • 6 oz. angel hair pasta
  • 1 teaspoon extra virgin olive oil
  • 1 lb. boneless, skinless chicken breast, cut into bite size pieces
  • 2 cloves garlic, minced
  • 1/4 cup chicken broth
  • 3 cups baby spinach
  • Juice from 1/2 of a lemon
  • 1/4 cup Parmesan cheese, shredded
  • Salt and pepper, to taste

Instructions

  • Cook the angel hair pasta according to the directions on the box.
  • Heat a pan and add the olive oil. Add the chicken breast and season with salt and pepper.
  • Once the chicken is cooked remove it from the pan. Add the garlic and saute for 1 minute. Add the chicken broth and spinach. Cover the pan and cook the spinach until it is wilted, about 3 minutes.
  • Add the lemon juice, chicken breast and pasta to the pan. Add the Parmesan cheese and stir until combined.
