Herb Baked Cod

Ingredients

  • 2 cod fillets
  • 1/4 cup cherry tomatoes, halved
  • 2 cloves garlic, minced
  • Olive oil spray
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon dried oregano
  • Pinch of dried parsley
  • Salt and pepper, to taste

Instructions

  • Preheat oven to 400 degrees F. Spray a small baking dish with cooking spray.
  • Rinse the cod fillet under cold water and pat it dry with a paper towel. Place the cod in the center of the baking dish.
  • Scatter the halved cherry tomatoes and minced garlic around the fillets.
  • Lightly spray the cod with olive oil. Evenly sprinkle the smoked paprika, dried oregano, parsley, salt, and pepper.
  • Place the baking dish in the oven and bake for 18-20 minutes. The fish is done when it flakes easily with a fork and appears opaque throughout.
  • Once the baking time is up, remove the dish from the oven and allow it to rest for a couple of minutes.
