Grilled Potatoes in Foil Packets: The Ultimate BBQ Side Dish

Yield: 4 servings

Ingredients

  • 14 oz. potato of choice, diced
  • 1/2 yellow onion, diced
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon parsley
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Also needed:

  • Aluminum foil and olive oil spray

Instructions

  • Preheat the grill.
  • In a small bowl mix together the garlic powder, onion powder, parsley, salt, and pepper.
  • Use aluminum foil pieces large enough to comfortably wrap the potatoes. Spray the aluminum foil with olive oil spray so the potatoes don't stick.
  • Add the potatoes and onion to the aluminum foil, then sprinkle on the seasoning mixture.
  • Bring the edges of the foil together and fold over. Once sealed you can add the potatoes to your preheated grill. Cook 20-30 minutes or until the potatoes are fork-tender.

To bake in the oven:

  • Preheat the oven to 350 degrees F.
  • Prepare the potatoes the same way. Add the foil packets to a baking sheet then put in the oven for 30 minutes or until the potatoes are fork-tender.
