French Dip Roll Ups

Yield: 4 roll ups with au jus

Ingredients

  • 4 Ole Xtreme high fiber tortillas
  • 8 oz. Boar's Head roast beef
  • 4 slices Sargento ultra thin provolone cheese
  • 1 yellow onion (cut into thin slices)
  • 1 teaspoon butter
  • 1 cup beef consommé
  • 1/4 cup water
  • 1 teaspoon Worcestershire sauce
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon onion powder

Instructions

  • Preheat oven to 400 degrees F.
  • Melt the butter in a frying pan then add the onions. Cook for 10 minutes stirring occasionally. When they're done cooking remove 3/4 of the onions from the pan.
  • Lay out one tortilla. Cut a piece of cheese in half then lay it out in the center of the tortilla. Add 2 ounces of roast beef and some of the onions then roll it up. Repeat with the rest of the tortillas.
  • Place the roll ups on a baking sheet and bake for 10 minutes.
  • Add the beef consommé, water, Worcestershire sauce, garlic powder and onion powder to the pan with the onions. Turn heat to medium/low and let it cook while the roll ups bake.
  • Divide the au jus into four small bowls and serve with the roll ups.
