Ingredients

  • 6 large eggs
  • 1/2 cup liquid egg whites
  • 1/2 cup reduced-fat cheddar cheese, shredded
  • 1/2 cup cooked turkey sausage
  • 1/2 cup red bell pepper, diced
  • 1/4 cup onion, finely diced
  • 1/4 cup reduced-fat cottage cheese
  • Salt and pepper, to taste

Instructions

  • Preheat the oven to 350 degrees F. and spray an 8x8 baking dish.
  • In a bowl, whisk together eggs, egg whites, cottage cheese, salt, and pepper.
  • Stir in the sausage, bell peppers, onion, and cheese.
  • Pour the mixture into the prepared dish.
  • Bake for 30-35 minutes, or until set in the center.
