Ingredients
1head cauliflower (cut into florets)
1tablespoonolive oil
Salt, pepper and garlic powder, to taste
2tablespoonsreduced-fat cheddar cheese, shredded
For the ranch dip:
1/2cupfat-free Greek yogurt
1tablespoon ranch seasoning
Instructions
Bring a pot of salted water to a boil. Add cauliflower and cook 8–10 minutes until fork-tender. Drain and pat dry (important for crispiness).
Preheat oven to 425 degrees F. Place florets on a parchment-lined baking sheet. Gently smash each one with the bottom of a glass. Brush with olive oil and season.
Bake for 20 minutes, until edges start to crisp.
Sprinkle cheese on each piece of cauliflower and return to the oven for 5-8 minutes.
Mix together the Greek yogurt and ranch seasoning. Serve with the crispy smashed cheesy cauliflower.
