Crispy Smashed Cheesy Cauliflower

Ingredients

  • 1 head cauliflower (cut into florets)
  • 1 tablespoon olive oil
  • Salt, pepper and garlic powder, to taste
  • 2 tablespoons reduced-fat cheddar cheese, shredded

For the ranch dip:

  • 1/2 cup fat-free Greek yogurt
  • 1 tablespoon ranch seasoning

Instructions

  • Bring a pot of salted water to a boil. Add cauliflower and cook 8–10 minutes until fork-tender. Drain and pat dry (important for crispiness).
  • Preheat oven to 425 degrees F. Place florets on a parchment-lined baking sheet. Gently smash each one with the bottom of a glass. Brush with olive oil and season.
  • Bake for 20 minutes, until edges start to crisp.
  • Sprinkle cheese on each piece of cauliflower and return to the oven for 5-8 minutes.
  • Mix together the Greek yogurt and ranch seasoning. Serve with the crispy smashed cheesy cauliflower.
