Crispy Parmesan Zucchini Chips

Ingredients

  • 1 medium zucchini
  • 1 tablespoon olive oil
  • 1/4 cup grated parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • Salt

Instructions

  • Preheat your oven to 400 degrees F. Line a baking sheet with parchment paper.
  • Slice your zucchini into rounds. Lay them on a paper towel or clean kitchen towel.
  • Lightly sprinkle with salt and let them sit for 10-15 minutes. When the time is up, lightly pat them dry with another paper towel.
  • Add the zucchini slices to a bowl and toss the zucchini slices with olive oil until evenly coated.
  • Sprinkle in the parmesan cheese, garlic powder, and Italian seasoning, then toss to coat.
  • Arrange the zucchini slices in a single layer on the baking sheet (avoid overlapping).
  • Bake for 18-22 minutes, or until golden brown and crispy around the edges.
  • Let them cool slightly, they'll crisp up even more as they sit. Serve and enjoy!
