Creamy One Skillet Lemon Pasta

Ingredients

  • 8 oz. uncooked spaghetti
  • 2 cups chicken broth
  • 1/2 cup fat-free half and half
  • 2 cloves garlic, minced
  • Zest and juice of 1 lemon
  • 2 teaspoons olive oil
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh basil or parsley, for garnish

Instructions

  • Heat the olive oil in a large skillet and lightly saute the garlic for 1 minute.
  • Pour in the broth and fat-free half-and-half, then add dry pasta. Stir in lemon zest, juice, and red pepper flakes.
  • Let it simmer uncovered for 10-12 minutes, stirring occasionally so the noodles don't stick together.
  • Once the pasta is tender and the liquid has reduced to a creamy sauce, stir in the Parmesan cheese. Season with salt and pepper and garnish with fresh herbs.
