Ingredients
8oz.uncooked spaghetti
2cupschicken broth
1/2cupfat-free half and half
2cloves garlic, minced
Zest and juice of 1 lemon
2teaspoonsolive oil
1/4teaspoonred pepper flakes (optional)
2tablespoonsgrated Parmesan cheese
Salt and pepper, to taste
Fresh basil or parsley, for garnish
Instructions
Heat the olive oil in a large skillet and lightly saute the garlic for 1 minute.
Pour in the broth and fat-free half-and-half, then add dry pasta. Stir in lemon zest, juice, and red pepper flakes.
Let it simmer uncovered for 10-12 minutes, stirring occasionally so the noodles don't stick together.
Once the pasta is tender and the liquid has reduced to a creamy sauce, stir in the Parmesan cheese. Season with salt and pepper and garnish with fresh herbs.
