Heat olive oil in a large skillet over medium heat.
Season the chicken with salt and pepper.
Add chicken breasts and cook 4-5 minutes per side, until golden and cooked through. Remove from the skillet and set aside.
In the same skillet, add garlic and cook for 30 seconds until fragrant. Pour in the chicken broth and bring to a gentle simmer.
Stir in the Boursin cheese until melted and smooth. Add spinach and cook until just wilted.
Return chicken to the skillet and spoon sauce over the top. Simmer 2-3 minutes, then remove from heat and garnish if desired.
