Ingredients
For the dressing:
1cupfat free Greek yogurt
1/2cuplight mayonnaise
1oz.fresh basil
2tablespoonsshallots, minced
2tablespoonsbasil pesto
1/4cupwhite wine vinegar
1tablespoongranulated Splenda
1teaspoonDijon mustard
Pinch of salt and black pepper
For the salad:
2cupsromaine lettuce, chopped
1boneless, skinless chicken breast (seasoned and cooked)
2slicescenter cut bacon, cooked and drained of grease
1hardboiled egg
2tablespoonsred onion, sliced
1/4cupchopped tomatoes
Instructions
Whisk together the dressing ingredients in a small mixing bowl. If the dressing is too thick you can add some water to thin it out.
To assemble the salad - add the romaine lettuce, chicken breast, bacon, hard boiled egg, red onion, and tomatoes to a bowl. Top with 1/4 cup of dressing.
