Ingredients
For the salad:

Romaine lettuce

boneless, skinless chicken breast, cooked and shredded

green onions, sliced

cup
shredded carrots

cilantro, chopped
1/2

mandarin oranges
1/2
cup
red bell pepper
1/2
cup
snap peas
For the dressing:

tablespoons
seasoned rice vinegar
1
tablespoon
reduced sodium soy sauce
1
tablespoon
sesame oil
1
teaspoon
fresh ginger
1
clove
garlic, minced
Juice of 1/2 lime
Instructions
In a large mixing bowl, combine all of the salad ingredients.
Add the dressing ingredients to a small bowl and stir to combine.
Pour the dressing over the salad just before serving and toss to coat evenly.
