Chinese Chicken Salad

Ingredients

For the salad:

  • 4 cups Romaine lettuce
  • 2 cups boneless, skinless chicken breast, cooked and shredded
  • 2 green onions, sliced
  • 1 cup shredded carrots
  • 1/4 cup cilantro, chopped
  • 1/2 cup mandarin oranges
  • 1/2 cup red bell pepper
  • 1/2 cup snap peas

For the dressing:

  • 3 tablespoons seasoned rice vinegar
  • 1 tablespoon reduced sodium soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon fresh ginger
  • 1 clove garlic, minced
  • Juice of 1/2 lime

Instructions

  • In a large mixing bowl, combine all of the salad ingredients.
  • Add the dressing ingredients to a small bowl and stir to combine.
  • Pour the dressing over the salad just before serving and toss to coat evenly.
