Ingredients

  • 1 lb. boneless, skinless chicken breast
  • 1 tablespoon extra virgin olive oil
  • 2 cups broccoli, chopped
  • 1 red onion, chopped into 1/2 inch pieces
  • 1 orange pepper, chopped into 1/2 inch pieces
  • 2 roma tomatoes, chopped into 1/2 inch pieces
  • 1 1/2 teaspoons garlic powder
  • 1 1/2 teaspoons onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon black pepper

Instructions

  • Cut the chicken into bite-size pieces and add it to a bowl.
  • In a small bowl add the garlic powder, onion powder, salt, dry mustard, chili powder, Italian seasoning, and pepper. Mix together.
  • Pour the olive oil over the chicken. Add all but one teaspoon of the seasoning to the chicken and mix it together.
  • Heat a nonstick skillet over medium heat. Add the chicken and cook for 6-8 minutes, or until the chicken is cooked all the way through.
  • Remove the chicken with a slotted spoon. Leave any of the juices from the chicken in the pan. Cover the chicken so it stays warm.
  • Add all of the vegetables to the pan and season with the remaining teaspoon of the seasoning mix.
  • Cover the pan so the remaining liquid can help steam the vegetables. Cook for 5 minutes.
  • Add the chicken back to the pan and mix together.
