Cut the chicken into bite-size pieces and add it to a bowl.
In a small bowl add the garlic powder, onion powder, salt, dry mustard, chili powder, Italian seasoning, and pepper. Mix together.
Pour the olive oil over the chicken. Add all but one teaspoon of the seasoning to the chicken and mix it together.
Heat a nonstick skillet over medium heat. Add the chicken and cook for 6-8 minutes, or until the chicken is cooked all the way through.
Remove the chicken with a slotted spoon. Leave any of the juices from the chicken in the pan. Cover the chicken so it stays warm.
Add all of the vegetables to the pan and season with the remaining teaspoon of the seasoning mix.
Cover the pan so the remaining liquid can help steam the vegetables. Cook for 5 minutes.
Add the chicken back to the pan and mix together.
