Cheesy Beef and Cauliflower Skillet

Ingredients

  • 1 lb. 96% lean ground beef
  • 10 oz. riced cauliflower (I used frozen riced cauliflower that I let thaw)
  • 1/2 red bell pepper, sliced thin
  • 2 cloves garlic, minced
  • 14.5 oz. petite diced tomatoes (drained)
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon oregano
  • 1/2 cup reduced-fat Mexican cheese, shredded
  • Salt and pepper, to taste

Instructions

  • In a large skillet over medium heat, cook the ground beef until browned, breaking it apart with a spatula. Drain any excess fat.
  • Stir in the bell pepper and garlic. Cook until softened, about 4-5 minutes
  • Add the riced cauliflower, petite diced tomatoes, smoked paprika, chili powder, oregano, salt, and pepper. Stir well.
  • Reduce the heat to low, cover, and cook for 5 minutes.
  • Sprinkle cheese over the top, cover, and cook for another 2 minutes until melted.
  • Garnish with parsley if desired and serve hot.
