Ingredients
1/2lb.Laura's lean ground beef (96% lean)
1/2tablespoonbutter
1/2cupcarrots, chopped
1/2cupcelery, chopped
1/2cuponion, chopped
1/4cupall purpose flour
4cupschicken broth
10oz.russet potato, peeled and cut into small pieces
1/2teaspoonItalian seasoning
1/2teaspoonoregano
1teaspoonsalt
1/2teaspoonpepper
3/4cupreduced-fat sharp cheddar cheese
3/4cupskim milk
Instructions
Brown and drain the ground beef.
Melt the butter in a Dutch oven or large pot. Add the carrots, celery and onion. Cook for 3 minutes.
Stir in the flour then slowly stir in the chicken broth.
Add the ground beef, potatoes, Italian seasoning, oregano, salt and pepper. Bring to a simmer, reduce heat and cover. Cook for 10 minutes or until the potatoes are tender.
Stir in the sharp cheddar cheese. Once it's melted add in the skim milk.
