Cheeseburger Soup

Ingredients

  • 1/2 lb. Laura's lean ground beef (96% lean)
  • 1/2 tablespoon butter
  • 1/2 cup carrots, chopped
  • 1/2 cup celery, chopped
  • 1/2 cup onion, chopped
  • 1/4 cup all purpose flour
  • 4 cups chicken broth
  • 10 oz. russet potato, peeled and cut into small pieces
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon oregano
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 3/4 cup reduced-fat sharp cheddar cheese
  • 3/4 cup skim milk

Instructions

  • Brown and drain the ground beef.
  • Melt the butter in a Dutch oven or large pot. Add the carrots, celery and onion. Cook for 3 minutes.
  • Stir in the flour then slowly stir in the chicken broth.
  • Add the ground beef, potatoes, Italian seasoning, oregano, salt and pepper. Bring to a simmer, reduce heat and cover. Cook for 10 minutes or until the potatoes are tender.
  • Stir in the sharp cheddar cheese. Once it's melted add in the skim milk.
