Cheese Tortellini Skewers

Ingredients

  • 20 cheese tortellini
  • 1/2 cup light Italian dressing
  • 20 cherry tomatoes, rinsed
  • 5 slices part-skim mozzarella cheese, cut into bite-sized pieces
  • 20 fresh basil leaves
  • 40 turkey pepperoni
  • 20 4-inch bamboo skewers

Instructions

  • Cook the cheese tortellini according to the directions on the package, drain, and let cool.
  • Once the tortellini is cooled, add it to a small bowl and pour in the light Italian dressing. Mix, cover, and refrigerate for at least 1 hour, or overnight.
  • Drain the cheese tortellini and discard the Italian dressing.
  • Assemble the skewers by adding the cherry tomato, two pieces of mozzarella cheese, fresh basil, two turkey pepperoni, and one cheese tortellini.
