Canadian Bacon and Vegetable Soup

Ingredients

extra virgin olive oil

carrots, chopped into large pieces

cup
celery, chopped into large pieces
1/2

onion, chopped

cloves garlic, minced

Canadian bacon, cut into bite-size pieces

oz.
russet potato, cut into bite-size pieces

cups
chicken broth
1/2
teaspoon
Italian seasoning
1/4
cup
fat-free half and half
Salt and pepper, to taste
Instructions
Add the olive oil to a nonstick soup pot over medium heat.
Sauté the carrots, celery, and onions for 5 minutes. Then, add in the garlic and cook for another minute. Stir in the potatoes and Canadian bacon.
Pour in the chicken broth and Italian seasoning. Bring to a boil, reduce the heat, and simmer for 20 minutes. Stir in the fat-free half and half.
