Canadian Bacon and Vegetable Soup

Ingredients

  • 1 teaspoon extra virgin olive oil
  • 1 cup carrots, chopped into large pieces
  • 1 cup celery, chopped into large pieces
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 6 oz. Canadian bacon, cut into bite-size pieces
  • 6 oz. russet potato, cut into bite-size pieces
  • 8 cups chicken broth
  • 1/2 teaspoon Italian seasoning
  • 1/4 cup fat-free half and half
  • Salt and pepper, to taste

Instructions

  • Add the olive oil to a nonstick soup pot over medium heat.
  • Sauté the carrots, celery, and onions for 5 minutes. Then, add in the garlic and cook for another minute. Stir in the potatoes and Canadian bacon.
  • Pour in the chicken broth and Italian seasoning. Bring to a boil, reduce the heat, and simmer for 20 minutes. Stir in the fat-free half and half.
