Beef Stew

Ingredients

  • 1 lb. lean rib eye steak
  • 2 tablespoon all purpose flour
  • 1 tablespoon light butter
  • 1 onion, sliced
  • 1 clove garlic, minced
  • 4 cups water
  • 1 bay leaf
  • 2 medium potatoes
  • 2 carrots
  • 1 1/2 cups green beans
  • 1/2 cup peas
  • 1 (1.5 ounce) packet McCormick beef stew seasoning mix
  • 2 splashes Worcestershire sauce
  • Salt and pepper, to taste

Instructions

  • Cut the rib eye into 1 inch pieces. Add it to a medium bowl and sprinkle with all purpose flour. Mix together.
  • Heat a large Dutch oven over medium heat. Melt the butter, add the steak and brown on all sides.
  • Stir in the onion and garlic and let cook 1 minute.
  • Add 4 cups of water and a bay leaf to the Dutch oven. Scrape any brown bits from the bottom of the pan.
  • Bring to a simmer then put the lid on. Continue to simmer 45 minutes.
  • Peel the carrots and potatoes, then cut into small pieces.
  • At the end of the 45 minutes add the carrots, potatoes, and seasoning packet. Place the lid back on and simmer 30 minutes.
  • Add 2 splashes of Worcestershire sauce, the green beans and peas. Simmer for 15 minutes.
