BBQ Muffin Cups

Ingredients

  • 1 lb. 96% lean ground beef
  • 1/2 cup G Hughes Original Sugar Free BBQ Sauce
  • 8 Pillsbury flaky layers biscuits
  • 1 cup reduced-fat Mexican cheese, shredded

Instructions

  • Preheat the oven to 400 degrees F. Spay a muffin pan with nonstick cooking spray.
  • In a skillet over medium heat, cook the 96% lean ground beef until it's thoroughly browned and no pink remains. Drain any excess fat then mix in the BBQ sauce.
  • Split each flaky layer biscuit in half. Position one half of each biscuit into the bottom of a muffin tin, pressing gently to create a small well.
  • Take the beef and BBQ sauce mixture and spoon it generously into each of the biscuit-lined muffin cups. Sprinkle a layer of reduced-fat cheese over each muffin cup.
  • Place the muffin tin in the preheated oven and bake until the biscuits are golden brown and the cheese has fully melted, 12-14 minutes.
  • Remove from the oven and let them cool slightly in the muffin tin
