Preheat the oven to 400 degrees F. Spay a muffin pan with nonstick cooking spray.
In a skillet over medium heat, cook the 96% lean ground beef until it's thoroughly browned and no pink remains. Drain any excess fat then mix in the BBQ sauce.
Split each flaky layer biscuit in half. Position one half of each biscuit into the bottom of a muffin tin, pressing gently to create a small well.
Take the beef and BBQ sauce mixture and spoon it generously into each of the biscuit-lined muffin cups. Sprinkle a layer of reduced-fat cheese over each muffin cup.
Place the muffin tin in the preheated oven and bake until the biscuits are golden brown and the cheese has fully melted, 12-14 minutes.
Remove from the oven and let them cool slightly in the muffin tin
