Baked Onion Rings - Weight Watchers Freestyle

Ingredients

  • 1 sweet onion
  • 2 eggs
  • 1/4 cup panko bread crumbs
  • 1/4 cup Italian bread crumbs
  • No-stick cooking spray

Instructions

  • Preheat oven to 425 degrees F.
  • Line a baking sheet with parchment paper.
  • Peel onion and slice into 1/2 inch thick rounds.
  • Add eggs to a small bowl and whisk together.
  • In another small bowl add the panko and Italian bread crumbs. Mix them together.
  • Dredge each onion slice in the egg, then the bread crumb mixture and place on the baking sheet. Repeat until all of the onion rings are done.
  • Spray the onions with no-stick cooking spray.
  • Bake for 7 minutes, then turn over the onion rings and bake 7 minutes or until golden brown.
