Baked Egg Boat - Weight Watchers Freestyle

Ingredients

  • 1 French baguette
  • 4 eggs
  • 2 tablespoons skim milk
  • 2 turkey sausage links (cooked), chopped
  • 2 tablespoons green peppers, chopped
  • 2 tablespoons onions, chopped
  • 1/4 cup reduced-fat Mexican cheese, divided
  • 1/8 teaspoon garlic powder
  • Salt and pepper, to taste

Instructions

  • Preheat oven to 350 degrees F.
  • Whisk together the eggs and milk in a mixing bowl. Add the sausage, green pepper, onion, 1 tablespoon Mexican cheese, garlic powder, salt and pepper. Mix it all together. 
  • Remove the top, middle portion of the French baguette. Be careful not to cut out too much or the eggs will spill out. 
  • Add the scrambled egg mixture to the bread boat. Sprinkle the remaining cheese on top. 
  • Bake 30-35 minutes or until the eggs are set. Let it cool for 5 minutes before cutting.
