This recipe is perfect for an easy weeknight dinner, a hearty lunch, or anytime you’re craving something indulgent without the extra points.

The Ingredients
Lean Ground Beef: Using 93–96% lean ground beef keeps the saturated fat lower while delivering high-quality protein.
Protein helps you feel satisfied and supports muscle maintenance, making this patty melt more filling and balanced.
Aunt Millie’s Live Carb Smart Bread: This bread is a favorite for low carb and Weight Watchers lifestyles. It’s lower in net carbs and calories than traditional bread, while still providing fiber to help keep you full longer.
It allows you to enjoy a sandwich style meal without feeling deprived.
Sargento Ultra Thin Swiss Cheese: Ultra Thin cheese slices give you real cheese flavor with fewer calories and less fat than standard slices.
Swiss cheese also provides protein and calcium, which support muscle and bone health.
Onions: Onions add natural sweetness and depth of flavor without adding many calories or points.
They’re rich in antioxidants and help boost flavor so you don’t need heavy sauces.
Olive Oil Spray: A small amount of olive oil helps achieve that classic grilled texture while providing heart-healthy fats.

How to Make a Low Carb Patty Melt
Heat a nonstick skillet over medium heat and spray with olive oil. Add the sliced onions and cook for 5–7 minutes, stirring often, until softened and lightly caramelized. Remove and set aside.
Season the ground beef with salt, pepper, and garlic powder, then shape into a thin patty roughly the size of the bread slices.
In the same skillet, cook the beef patty for 3–4 minutes per side, or until fully cooked. Remove from the skillet.
Spray one side of each slice of bread with olive oil. Place one slice of bread, oil side down, into the skillet. Top with the beef patty, Swiss cheese, and caramelized onions.
Top with the second slice of bread, oil side up, and cook over medium-low heat for 2–3 minutes per side, until the bread is golden and the cheese is melted.
Slice in half and serve warm.
