Watermelon Salad – Weight Watchers

One of the many things I love about summer is watermelon! When I was growing up we always had it. My Mom put that melon baller to work!

As much as I love balling up watermelon there are so many other things you can do with it. This watermelon salad is one of them. It has lime juice, reduced fat feta cheese and fresh mint. It’s so good!

When I was making this watermelon salad my kids looked at me like I was crazy. I’m not gonna lie, they didn’t try it. They wanted to stick to their regular ol’ watermelon. I’m ok with that since they are usually good sports about trying everything I make.

 

To make my life a little easier I bought a seedless watermelon. Making this watermelon salad took about 5 minutes. I cut up the watermelon, chopped the fresh mint, sliced my lime in half, mixed it all together, then sprinkled the reduced fat feta cheese on top. That’s it!

I ate this as a snack but it would also be a great side dish if you’re grilling up some chicken. Since it is only 1 Freestyle point you could have a really low point dinner.

The only problem I had with this recipe was they were out of watermelons the first time I tried to make it. Out of watermelons!!! I was so sad. The next time I went to the store they had two watermelons. You better believe I snatched one of them right up.

Since I will be making this many more times this summer I am hoping my kids will eventually be brave enough to try it. If not that’s ok, more for me!

Watermelon Salad

Yield: 1 Serving = 1 Freestyle Point

Ingredients: 

  • 2 cups watermelon cut into 1″ pieces
  • Juice from 1/2 lime
  • 2 tablespoons fresh mint, chopped
  • 2 tablespoons reduced fat feta cheese

Directions: 

  1. Gently stir together all of the ingredients. That’s it!
