Lightened Up Vodka Sauce

Yield: 8 servings (2 points per serving for blue, green and purple)

  • 1 teaspoon extra virgin olive oil
  • 2 cloves garlic, minced
  • 1/2 cup vodka
  • 30 oz. tomato sauce (or crushed tomatoes)
  • 1 cup fat free half and half
  1. Heat olive oil in a saucepan, then add the garlic. Cook for 1 minute, then add the vodka.

  2. Cook the vodka for a minute, then add the tomato sauce. Bring to a simmer and let cook for 5 minutes.

  3. Add the half and half and stir. Cook for 5 more minutes, then serve with pasta or zucchini noodles.
