One Pan Cheesy Chicken Broccoli and Rice

Yield: 4 servings (5 points per serving for blue and purple, 7 points per serving for green)

  • 1 small onion, chopped
  • 1 clove of garlic, minced
  • 2 boneless, skinless chicken breasts cut into bite size pieces
  • 3 cups fat-free chicken broth
  • 1 cup long grain white rice
  • 2 cups steamed broccoli, chopped
  • 1 cup reduced-fat Mexican cheese, shredded
  • Salt and pepper, to taste
  1. Spray frying pan with 0 point olive oil spray and add onions and garlic. Let cook for one minute.

  2. Add the chicken breast to the pan and season with salt and pepper. Cook until the chicken is just slightly pink in the center.

  3. Add chicken broth to the pan, then stir in the rice. Bring to a simmer and place lid on the pan. Cook 15 minutes, stirring occasionally.

  4. Add the cheese to the pan and stir until it melts, then add the broccoli. Add salt and pepper if needed.
