Antipasto Skewers

Yield: 12 Antipasto Skewers (1 point each for blue, green and purple)

Course: Appetizer
  • 6 fresh mozzarella balls, cut in half (the kind I used were 1 point each)
  • Artichoke hearts (I used artichoke hearts in water, you need about 1 cup worth)
  • 2 tablespoons lite Italian dressing
  • 12 olives
  • Roasted red peppers (I used roasted red peppers in water, you need about 1 cup worth)
  • 12 slices turkey pepperoni
  1. Begin by cutting each mozzarella ball in half. Place the cheese in a small bowl and add 1 tablespoon lite Italian dressing.

  2. Drain artichoke hearts and add them to a small bowl. Add 1 tablespoon lite Italian dressing and mix together.

  3. Assemble the skewers by adding a piece of cheese, roasted red pepper, artichoke heart, slice of pepperoni and olive. Repeat until you have 12 Antipasto Skewers.
