Yield: 1 serving (2 points for blue and purple, 4 points for green)

  • 2 slices bread (use bread that is only 1 point per slice such as Sara Lee 45 calorie bread)
  • 1 egg
  • 5 tablespoons unsweetened almond milk
  • 1 tablespoon granulated Splenda
  • 1/8 teaspoon vanilla extract
  1. Preheat oven to 350 degrees F.

  2. Cut bread into 1/2 inch pieces and add to a bowl.

  3. Whisk together the egg, almond milk, Splenda and vanilla extract.

  4. Pour the egg mixture over the bread. Stir to make sure all of the liquid is absorbed.

  5. Spray a 10 oz. ramekin with no-stick cooking spray, then add the bread mixture.

  6. Bake for 25 minutes. Enjoy!
