Tomato Salad - Weight Watchers

Yield: 4 servings (1 point per serving for green, blue and purple)

Course: Side Dish
  • 20 oz. cherry tomatoes (I used red and orange)
  • 1 cucumber
  • 1 oz. part-skim mozzarella cheese
  • 2 tablespoons fresh basil, chopped
  • 3 tablespoons light Italian dressing
  1. Cut the cherry tomatoes in half and add them to a large serving bowl.

  2. Chop the cucumber into bite-size pieces and add them to the serving bowl.

  3. Cut the part-skim mozzarella cheese into small squares and add it to the serving bowl.

  4. Add the basil and Italian dressing and stir well.
