Cheesy Baked Tomatoes

  • 3 Roma tomatoes
  • 1/2 tablespoon extra virgin olive oil
  • 1 small garlic clove, minced
  • 1/3 cup part-skim mozzarella cheese, shredded
  • Fresh basil, chopped
  • Salt, to taste
  1. Preheat oven to 400 degrees F.

  2. Add the olive oil to a small bowl and add the minced garlic.

  3. Clean and slice the tomatoes. Line a baking sheet with parchment paper and add the tomato slices.

  4. Sprinkle the tomatoes with salt. Use a pastry brush to brush on the garlic infused oil.

  5. Top the tomatoes with cheese then the fresh basil.

  6. Bake for 7 minutes or until the cheese is melted.
