Coconut Milk Marinated Chicken

  • 1 lb. boneless, skinless chicken breasts
  • 1 (13.5 oz.) can light, unsweetened coconut milk
  • Juice from one lime
  • 3 cloves garlic, minced
  • 1/2 cup cilantro
  • 1/2 teaspoon salt
  1. Add all of the ingredients to a zip-up bag. Seal the bag and place in the fridge for 4 hours or overnight.

  2. Cook the chicken on the grill, stovetop or bake in the oven.

On the grill or stovetop:
  1. Cook the chicken 4-5 minutes on each side, depending on the thickness of the chicken breasts. The chicken is cooked when the internal temperature reaches 165 degrees F.

Baked in the oven:
  1. Preheat oven to 400 degrees F. Cook chicken 20 minutes or until the internal temperature reaches 165 degrees F.
