Instant Pot Pork Tenderloin

Ingredients
  • 1 lb. pork tenderloin (trimmed of any fat)
  • 1 cup chicken broth
  • 1 tablespoon cornstarch
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon parsley
  • 1/2 teaspoon seasoning salt
  • 1/4 teaspoon black pepper
Instructions
  1. In a small bowl mix together the garlic powder, onion powder, chili powder, parsley, seasoning salt and black pepper.

  2. Pour chicken broth into the bottom of the Instant Pot. Place the trivet into the pot.

  3. Cut the pork tenderloin in half then place on the trivet. Pour the seasoning mix over the pork tenderloin.

  4. Secure the lid in the locked position and make sure the lever is set to seal. Press the manual button and set the time to 12 minutes.

  5. When the time is up let the pressure release naturally for 10 minutes. Release the pressure and remove the lid.

  6. Place the pork on a cutting board and let it rest for 5 minutes.

  7. Remove the trivet and turn the Instant Pot to sauté. Add the cornstarch to a small bowl and mix with 1/4 cup of water. When the cooking liquid starts to simmer stir in the cornstarch mixture. Cook for 3 minutes, until the liquid thickens and reduces slightly, stirring occasionally.

  8. Slice the pork tenderloin, add to a serving platter and top with gravy.

For the slow cooker:
  1. In a small bowl mix together the garlic powder, onion powder, chili powder, parsley, seasoning salt and black pepper.

  2. Add the chicken broth and pork tenderloin to the slow cooker.

  3. Top the pork tenderloin with the seasoning mix. Cover and cook on low 4 hours.

  4. Remove the pork tenderloin and let it rest.

  5. Pour the cooking liquid into a small saucepan and bring to a simmer.

  6. In a small bowl mix together the cornstarch and 1/4 cup of water. Stir into the cooking liquid. Let simmer 3 minutes, until it thickens and reduces slightly.

  7. Slice the pork tenderloin and add to a serving platter. Top with the gravy.
