Chopped Broccoli with Bacon

  • 24 oz chopped broccoli (fresh or frozen)
  • 4 slices center cut bacon
  • 1/2 cup onion, chopped
  • 3 cloves garlic, minced
  • 1/2 cup Parmesan cheese, shredded
  • Salt and pepper, to taste
  • Olive oil spray
  1. Cook and drain the bacon. Cut into bite size pieces and set aside.

  2. Spray a large skillet with olive oil spray. Add the onion and cook until somewhat translucent. Add the garlic and cook 1 more minute.

  3. Add the broccoli to the skillet. Cook for 8 minutes, stirring occasionally.

  4. Stir in the bacon and Parmesan cheese and season with salt and pepper.
