  • 1 cup Ore Ida country hash browns
  • 2 tablespoons yellow onion, chopped
  • 1/4 cup green pepper, chopped
  • 1/4 cup diced ham
  • 2 tablespoons reduced fat cheddar cheese, shredded
  • 2 eggs, scrambled
  • Salt and pepper, to taste
  1. Spray a large pan with olive oil and add the potatoes and onions. Season with salt and pepper. Cook the potatoes for 10 minutes. Add the green pepper and ham during the last 3 minutes.

  2. Sprinkle the cheese over the potatoes and push to the side. Add the eggs to the pan and season with salt and pepper. Once the eggs are fully cooked add everything to a bowl.
