Parmesan Crusted Salmon

  • 2 salmon fillets
  • 1 egg
  • 1/4 cup Panko breadcrumbs
  • 1/4 cup Parmesan cheese, shredded
  • 2 tablespoons fresh parsley
  • 1/4 teaspoon garlic powder
  • Pinch of salt
  • Lemon slices (optional)
  1. Preheat oven to 400 degrees F.

  2. In a small bowl whisk the egg.

  3. In a shallow bowl add the Panko breadcrumbs, shredded Parmesan, parsley, garlic powder and salt. Mix together.

  4. Spray a baking sheet rack with nonstick cooking spray and set to the side.

  5. Take one salmon filet and dip both sides in the egg mixture, then the Panko mixture. Place the salmon on the baking sheet skin side down, then repeat with the second piece of salmon.

  6. Bake 15 minutes or until the internal temperature reaches 125-130 degrees.
