Spinach Parmesan Pasta

Ingredients
  • 8 oz. uncooked bow-tie pasta (or pasta of choice)
  • 5 oz. fresh baby spinach
  • 1 tablespoon butter
  • 2 medium cloves garlic, minced
  • 1/3 cup Parmesan cheese, shredded
  • Salt and black pepper, to taste
Instructions
  1. Add the pasta to a large pot of boiling water. Cook according to the directions, until the pasta is al dente. Reserve 1 cup of the pasta water then drain the pasta.

  2. Melt the butter in the large pot then add the garlic. Cook for 1 minute then add the cooked pasta and spinach to the pot.

  3. Stir together then add in some of the reserved pasta water. I usually use 1/2 cup.

  4. Stir in the Parmesan cheese and add salt and black pepper.
