  • 1 cup canned pumpkin
  • 1/3 cup unsweetened applesauce
  • 1/2 cup sugar free maple syrup
  • 1/4 cup skim milk
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 3/4 cup all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon pumpkin pie spice
  1. Preheat oven to 350 degrees F.

  2. Add the pumpkin, applesauce, syrup, milk, eggs and vanilla extract to a mixing bowl. Stir together.

  3. In a separate large mixing bowl add the flour, baking soda, salt and pumpkin pie spice. Whisk together.

  4. Pour the pumpkin mixture into the flour mixture. Stir together until combined.

  5. Spray a 1.5 quart bread pan with nonstick cooking spray. Pour the pumpkin bread batter into the pan.

  6. Bake for 55 minutes or until a toothpick inserted in the middle comes out clean.
