Applebee's Pico de Gallo Copycat Recipe

Yield: 4 servings (each serving is approximately 3/4 cup, 1 point per serving for blue, green and purple)

Ingredients
  • 1 1/2 lbs. ripe tomatoes, cored and diced
  • 1 cup red onion, chopped
  • 1/2 cup cilantro, chopped
  • 2 tablespoons jalapenos, diced
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon white vinegar
  • 1 clove garlic, minced
  • 2 teaspoons salt
  • 1/2 teaspoon pepper
Instructions
  1. In a large bowl mix together all of the ingredients. Cover and let sit in the fridge for 2 hours or overnight.
