Fruit Salsa and Cinnamon Crisps

The fruit salsa serves 2-8 (0 Freestyle points). The cinnamon crisps serve 2-8 (2 Freestyle points total).

Course: Appetizer, Dessert, Snack
For the Cinnamon Crisps:
  • 2 Ole Xtreme High Fiber Tortillas
  • 3 tablespoons granulated Splenda
  • 1 teaspoon cinnamon
For the Fruit Salsa:
  • 1 apple (I use honey crisp)
  • 1 tablespoon fresh lemon juice
  • 1 lb. strawberries
  • 6 oz. raspberries
  • 1 peach
  • 2 tablespoons Smucker's sugar free strawberry jam
For the Cinnamon Crisps:
  1. Preheat oven to 350 degrees F.

  2. Cut the tortillas into triangles and add them to a baking sheet.

  3. In a small bowl, mix together the granulated Splenda and cinnamon.

  4. Spray tortillas with cooking spray, then add the cinnamon mixture. Flip the tortillas and repeat on the other side.

  5. Bake 7-9 minutes, or until the tortillas are crispy.

For the Fruit Salsa:
  1. Peel apple, then cut it into small pieces. Add it to a small mixing bowl, then add the lemon juice and stir together.

  2. Cut the strawberries and peach into small pieces and add to the apple.

  3. Cut the raspberries in half and add to the other fruit.

  4. Place the jam in the microwave for 10 seconds, then add it to the fruit. Stir together the jam and the fruit. Enjoy!
