Thai Cucumber Salad

Yield: 2-4 servings (1 point per serving for blue, green and purple)

  • 2 English cucumbers
  • 1/4 red onion
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon sugar
  • Pinch of red pepper flakes
  1. Cut the cucumber into slices and them to a mixing bowl.

  2. Slice or chop the red onion and add it to the cucumber.

  3. Add the apple cider vinegar, sesame oil, sugar and red pepper flakes then mix together. Serve immediately or refrigerate until you're ready to eat it.
