Yield: 7 servings (Each serving is 2 cups. 5 points per serving for blue, green and purple)

Ingredients
  • 8 oz. Penne pasta
  • 1 tablespoon extra virgin olive oil
  • 1/2 onion, chopped
  • 8 oz. asparagus (ends trimmed, then cut into 1 inch pieces)
  • 2 cups broccoli
  • 1 red pepper (sliced thin)
  • 1 yellow squash, chopped
  • 1 zucchini, chopped
  • 10 oz. cherry tomatoes, cut in half
  • 2 cloves garlic, minced
  • 1/2 cup reserved pasta water
  • 2 tablespoons lemon juice
  • 1 teaspoon Italian seasoning
  • 1/2 cup Parmesan cheese, shredded
  • Salt and pepper, to taste
Instructions
  1. Cook the pasta according to the directions on the box. Reserve 1/2 cup of the pasta water, then drain the noodles.

  2. Add 1 tablespoon extra virgin olive oil to a large pan. Sauté onions for 2 minutes.

  3. Add the asparagus, broccoli and red pepper, cook for 2 minutes.

  4. Add the squash and zucchini, cook for 2 minutes

  5. Add the tomatoes and garlic, cook for 2 minutes.

  6. Add the noodles to the vegetables, then add the reserved pasta water, lemon juice, Italian seasoning, salt, pepper and Parmesan cheese. Stir together. Enjoy!
