Chocolate Chip Banana Muffins

Ingredients
  • 1 cup mashed bananas (use extra ripe bananas)
  • 1/3 cup unsweetened applesauce
  • 1/2 cup sugar free maple syrup
  • 1/4 cup skim milk
  • 2 eggs
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 3 tablespoons mini chocolate chips
  • 1 3/4 cups all purpose flour
Instructions
  1. Preheat oven to 350 degrees F.

  2. In a large mixing bowl add the mashed bananas, applesauce, sugar free maple syrup, skim milk, eggs, baking soda, baking powder, vanilla extract, salt and cinnamon. Stir together well.

  3. Add the chocolate chips and flour. Mix together but don't over stir it.

  4. Line a muffin tin with cupcake liners. Divide the muffin batter into the 12 cups.

  5. Bake for 20 minutes. Remove from oven and let cool for 5 minutes.
