Corn Salsa

Yield: 4 servings (0 points per serving for blue and purple, 3 points per serving for green)

  • 4 ears of corn
  • 1 red pepper, chopped
  • 2 tablespoons red onion, chopped
  • 1 jalapeno, chopped
  • 3 tablespoons cilantro, chopped
  • 1 clove garlic, minced
  • Juice from one lime
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon chili powder
  1. Bring a pot of water to a boil. Add the corn and cook 4-5 minutes.

  2. Remove the corn from the water and let it cool. Once you can handle the corn use a knife to cut off all of the kernels. Add it to a mixing bowl.

  3. To the mixing bowl add the red pepper, red onion, jalapeno, cilantro and garlic. Stir together then add the lime juice, salt, pepper and chili powder. Mix together and serve.
