For the chicken:
  • 1 lb. boneless, skinless chicken breast
  • Salt and pepper, to taste
For the chimichurri sauce:
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon water
  • 1 tablespoon white wine vinegar
  • 3/4 cup fresh parsley
  • 3/4 cup fresh cilantro
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  1. Season the chicken with salt and pepper. Grill the chicken until it is cooked all the way through.

  2. Add all of the ingredients for the chimichurri sauce into the food processor. Use chop/pulse the food processor 5 times to chop all of the ingredients. Do not go too long or the sauce will become liquid.
