Roasted Brussels Sprouts with Balsamic and Dried Cranberries - WW (Weight Watchers)

  • 1 lb. Brussels sprouts
  • 1/2 cup balsamic vinegar
  • 1 tablespoon sugar
  • 1/4 cup dried cranberries
  • Salt, to taste
  • Pam no-stick olive oil spray
  1. Preheat oven to 400 degrees F.

  2. Cut off the ends of the Brussels sprouts and clean them.

  3. Add the Brussels sprouts to a baking pan. Spray 10 times with the Pam and sprinkle with salt.

  4. Add Brussels sprouts to the oven for 30 minutes. Take them out after 15 minutes to stir, add 10 more sprays of Pam and salt.

  5. Add the balsamic vinegar and sugar to a small sauce pan. Bring to a boil then reduce heat to medium. Cook until the vinegar thickens and reduces by half.

  6. Add the Brussels sprouts to a mixing bowl, then add the balsamic glaze and the dried cranberries. Stir together and serve.
