Yield: 6 servings (2 points per serving for blue and purple, 4 points per serving for green)
Preheat oven to 250 degrees F.
Cut each slice of bread into 12 pieces.
Put bread on a baking sheet and bake for 10 minutes.
Add the eggs, milk and vanilla extract to a mixing bowl and whisk together. Then add the cinnamon and Splenda and mix together.
Add the toasted bread to an 8x10 baking pan sprayed with no-stick cooking spray. Pour the egg mixture evenly over the bread.
Cover the pan with plastic wrap and refrigerate over night.
Preheat oven to 350 degrees F.
Uncover the French toast and bake for 30 minutes.
